Heart-Healthy Spinach Salad

Serves: 4

Ingredients:

For Salad:

  • ¼ cup Broccoli florets
  • ¼ Red bell peppers, julienned
  • 1/8 cup Sliced red onion
  • 3 cups Fresh spinach

For Dressing:

  • 1 tablespoon Extra virgin olive oil
  • ½ tablespoon Apple cider vinegar
  • 1 teaspoon Yellow mustard
  • 1 teaspoon Garlic powder
  • Pinch Sea salt and pepper

Directions:

  1.  Take your broccoli florets, and lightly steam in the microwave for 1- 2 minutes. Once done, set aside
  2. Place spinach in a medium sized bowl, drizzle with half of the dressing.
  3. Add broccoli, red bell pepper and onion. Stir and drizzle rest of the dressing.
