Rink Side Recipe: Steak Fajita Skillet

Serves: 4

Ingredients:

  • 1 lb flank steak
  • 3-4 bell peppers (colors of choice red, green, yellow)
  • 1 yellow onion
  • 1 TBS olive oil
  • 1 bunch cilantro
  • Avocado (for topping)
  • Lime (for topping)
  • Tomato or salsa (for topping)

Marinade:

  •  ½ lime juice
  • 2 TBS olive oil
  • 2 tbs chopped cilantro
  • ½ tsp cumin
  • ½ tsp garlic powder
  • ½ tsp paprika
  • ½ tsp salt
  • ¼ tsp cayenne
  • Pepper to taste

Directions:

  1. Whisk marinade ingredients together. Pour into a deep dish and let steak marinade for 40 minutes.
  2. Slice peppers and onions while steak marinades.
  3. Heat a large skillet over medium heat.  Add steak and let cook for 4-5 minutes on each side.
  4. Remove from pan and let rest.
  5. Add olive oil and veggies. Cook until tender. Mix in chopped cilantro.
  6. Slice meat against the grain. Serve with avocado, tomatoes, lime.
